The word probiotic comes from the Greek word “pro bios” and means “for life”. According to the definition presented by Organization of the United Nations for Food and Agriculture matters (FAO) and the World Health Organization (WHO), probiotics are “living microorganisms, which given in appropriate amounts, have beneficial health effects”.
When it comes to microorganisms with probiotic properties, the most important are bacteria of the genus Lactobacillus and Bifidobacterium. However, only selected, well-defined strains from a given species are characterized by pro-health features confirmed by research.
Probiotics used in nutrition help to maintain the microbiological balance of the digestive tract, both in terms of quantity and quality. The main roles of the probiotic bacteria :
- intestine colonization and consequent displacement of pathogenic microorganisms,
- improvement of immunity,
- prevention of intestinal infections.
Not every lactic acid bacteria used for production is a probiotic, because not all stains cause the same healthy effect in the human body. The probiotic properties of bacteria are feature of a specific strain (biotype) of a given species. The beneficial properties are strain depended – specific for one selected bacteria strain.
